Homemade Granola

 Welcome to my baking lesson everybody!

Today I will show you how to make your very own granola. For those of you who don't know what that is: granola is a caramelized, very crispy cereal. I make it once in a while as a present or as a special treat for myself (since it isn't super healthy). Another great reason to try to make your own is that you get to decide what ingredients it will have (and if that's important to you also the quality and origin of the ingredients). So let's start, shall we?

Ingredients for the recipe

This is the basic recipe (the specific ingredients for this one I will share later on):

  • 300g multigrain flakes
  • 200g nuts, kernels or seeds
  • 100g extras of your choice (e.g. coconut chips or cornflakes)
  • 60g olive oil
  • 150g honey, maple syrup or agave syrup
  • 1 pinch salt
  • spices (e.g. cinnamon, vanilla, etc.)
  • optional: 300g dried fruits, chocolate drops, etc.
Instruction:

  1. Chop the nuts, kernels and seeds into eatable pieces.
  2. Mix the flakes with the seeds, the kernels, the nuts, the extras, the olive oil, the honey or syrup and the spices until everything is nicely blended and the fluid ingredients are spread everywhere.
  3. Scatter the granola on a baking sheet lined with parchment paper. 
  4. Put the baking sheet in the preheated oven (150°C/300°F).
  5. In the mean time, chop the optional ingredients such as the dried fruits.
  6. After a baking time of 10 minutes, stir the granola. That way it will caramelize evenly.
  7. After another 10 minutes, add the optional ingredients (except the chocolate drops) and stir everything again.
  8. The granola should be finished after another 5-10 minutes. It should be crispy, but not too brown/dark. Leave it to cool.
  9. If you wish, you can now add the chocolate drops and fill your granola into a recipient. 
Some ways to eat it are: with milk, with yoghurt and fruits or just plain as a snack. It should be durable for at leastv 2 weeks because of the caramelization, although it probably won't even last that long ;)

Here are the specifics for the batch I made in the pictures:
  • 300g oat flakes
  • 75g sunflower seeds and pine nuts
  • 50g popped amaranth
  • 30g almonds
  • 45g walnuts
  • 40g cornflakes
  • 60g coconut chips
  • 150g maple syrup
  • 60g olive oil
  • salt, cinnamon (1-1,5 teaspoons), vanilla (off a mill)
  • 50g raisins
  • 75g cranberries
  • 100g dried mangos
  • 75g banana chips
